A new study reported by scientists of Thailand and USA claims that high dietary intake of Monosodium Glutamate (MSG) can exert negative effect on pancreatic cells in rats. This negative effects may increase the susceptibility to diabetes. MSG, a sodium salt of glutamic acid, is commonly used as a flavor enhancer in the food industry.
While the Food and Drug Administration (FDA) in India and abroad have stated that low levels of MSG are safe as a flavor enhancer in noodles, pasta etc., its safety as a food additive is still debated. Contrasting views have reported either the association of dietary MSG consumption with metabolic disorders such as obesity or above average weight, arterial hypertension and metabolic syndrome or have reported the lack of any such associations.
